Scrambled Tofu

Fancy vegan scrambled eggs? Then give this delicious and easy scrambled egg alternative a chance! You only need a few ingredients and the recipe is quick and easy to prepare. Without the egg, the scrambled tofu is cholesterol-free, low in saturated fat and full of high-quality vegetable proteins! Have fun trying!

Ingredients

  • 1 block of natural tofu
  • 4 spring onions
  • 2 tbsp olive oil
  • 1 dash of soy sauce
  • 3-5 tbsp unhealthy soy yogurt
  • Spices: salt, pepper, turmeric, smoked paprika, Italian herbs
  • 1/2 block vegan feta
  • Sun-dried tomatoes
  • 1 large piece of ciabatta or 2 rolls
  • hummus

preparation

2 portions I 20 minutes I Vegan

  1. Chop up the natural tofu with a fork
  2. Wash the spring onions, remove the stalk and cut into fine rings
  3. Heat olive oil, add tofu & most of the spring onion & sauté for 5-10 min
  4. Deglaze with soy sauce & add the soy yoghurt until the desired consistency is reached
  5. Season with salt, pepper, turmeric, smoked paprika & Italian herbs
  6. Chop vegan feta & dried tomatoes & add
  7. Spread the ciabatta with hummus & spread the scrambled tofu on top. Garnish with the remaining spring onions.
